The gemstone chips do not touch the water as they are protected in a glass case, it is much safer to infuse your water with crystals this way. Here is a list of crystals you don't want in water. The water bottle crystal insert (also available separately here) can be taken out and switched with another insert of a different stone type. The bottle comes fully apart so that it can be cleaned easily as well.
